The Ventori Highlands (Source Region)

The northern mountainous region of the Republics of Waon — bordered west by Nasobeem (facing the Sharmarin Ocean), north/northeast by central-continent forests, south by the Dielvan Wac Desert, east by the Republics of Waon's rolling hills. Three named sub-ranges: the Nasobeem Mountains (highest peaks), the Ventori Mountains (foothills), and the Keolite Hills (southern foothills bordering the desert). Volcanic soil — rich in lava minerals, iron ore composites, copper traces, and coal deposits — combined with three distinct wind/rain patterns (moist ocean air west, cool rain northeast, dry desert breeze south), produces exceptionally flavorful wines, cheeses, meats, coffees, and chocolates found nowhere else on the planet.

Notable products: Highland Red/Foothill White/Ventori Sparkling wines; Ventori Bleu, Keolite Gold, and Highland Cream cheeses; Stunted Cow Beef, Ventori Lamb, Keolite Pork; Highland Coffee and Ventori Cocoa; aromatic crab apples, Highland Grapes, Keolite Figs, Ventori Berries. Also prized: Ventori Hazelnuts, Keolite Chestnuts, Mountain Almonds, Sharmarin Walnuts; and flavorful leaves including Highland Bittergreens, Copperleaf Herb, Nasobeem Mint, Ventori Pepperleaf, and Sharmarin Lemonleaf.

Jhay Calsa's Story

Born in the Highlands, third of seven children. As a boy, Jhay helped his father Paolo pick coffee, grapes, and cocoa beans on the family's 900-acre estate, while also studying with his mother and sisters — gathering nuts, leaves, herbs, and spices, and learning to blend them into food. This dual education (farming + cooking) was unusual and shaped his later cuisine. At 22 he moved to Kila Vas, working 15 years at Hilgebergis Restaurant in the political district (serving diplomats and envoys from thousands of nations/worlds), rising to sous chef within 7 years. At 37, he opened Jhay's Way in central Kila Vas.
